Appetizers

Baked Cinnamon Chips
Prep time: 5 minutes
Cook time: 20 minutes
Yields: 64 Wedges

8 (7-inch) Flour Tortillas
¼ Cup Sugar
1 tsp cinnamon
Nonstick Cooking Spray

Preheat oven to 400ºF.  Cut each tortila into eight wedges.  In a small bowl, combine sugar and cinnamon.  Lightly spray tortillas with nonstick cooking spray.  Sprinkle cinnamon/sugar mixture evenly over tortilla wedges.  Bake 8-10 minutes until chips are browned.  Serve with Apple Berry Salsa.

Tips: Keep an eye on these, they burn easily.

Apple Berry Salasa
Prep time: 25 minutes
Yields: 3 Cups

2 Medium Granny Smith Apples, Diced
1 Pint Strawberries, Diced
2 Kiwi, Peeled and diced
1 tsp Orange Zest
2 Tbl Fresh Orange Juice
2 Tbl Packed Brown Sugar
2 Tbl Apple Jelly or Apricot Jam

Peel, Core, and dice apples.  Place in mixing bowl.  Dice Strawberries and kiwi; add to mixing bowl.  Set aside.

In small mixing bowl, combine zest, juice, brown sugar, and jelly.  Add to fruit mixture and mix gently. Refrigerate until served.  Serve with Baked Cinnamon Chips.

Chipped Beef Cheese Ball
Prep time: 15 minutes
Refrigerate Over Night

2 -8oz. Packages of Softened Cream Cheese
2 -2oz. Packages of Chipped Beef (cut into strips and then diced into tiny pieces)
2 Tbl Finely Chopped Green Onion Tops (adjust for taste)
¾ Cup Chopped Pecans

Set pecans aside for later, mix all other ingredients well.  Form into ball and roll in chopped pecans.  Wrap in plastic wrap and refrigerate overnight.  Serve with Crackers.

Pineapple-Pecan Cheese Ball
Prep time: 15 minutes
Refrigerate Over Night

2 -8oz. Packages of Softened Cream Cheese
8 oz. Can Crushed Pineapple (well-drained)
¼ Cup Finely Chopped Green Pepper
2 Tbl Finely Chopped Green Onion Tops (adjust for taste)
¾ Cup Chopped Pecans

Set pecans aside for later, mix all other ingredients well.  Form into ball and roll in chopped pecans.  Wrap in plastic wrap and refrigerate overnight.  Serve with Crackers.

Pizza Rolls (Tipton Family Recipe)

Pizza Dough Recipe
1 lb. Itailian Sausage
1 Cup Mozarella Cheese
Fresh Parsley
Basil (optional)

Roll out pizza dough and sprinkle with sausage, shredded mozzarella cheese, parsley and basil.  Roll up the dough jelly roll (cinnamon roll) style, cut into rolls.  Then back at 400ºF until the bread is done.

Golden Cheesies (Tipton Family Recipe)

Yeilds: 48:

2 ½ Cups Flour
1 Cup Butter
1 Cup Sour Cream
Seasoned Salt
Pepper
3 Cups Shredded Cheddar Cheese
Paprika

Combine flour, butter and sour cream in mixing bowl, mix well.  Divide into four portions. Wrap, chill until firm.  Roll out dough, ¼ at a time on a well floured surface into a 12 x 6 inch rectangle.  Sprinkle each lightly with seasoned salt, pepper, then ¾ cup cheese.  Roll up length wise, jelly roll (cinnamon roll( fashion).  Seal edges and ends.

Place seam side down on ungreased cookie sheet.  Using a sharp knife, cut rolls halfway through at 1 inch intervals.  Sprinkle with paprika.  Bake at 350ºF 30-35 minutes, until golden brown.
