Muffins

Pumpkin Bran Muffins

  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 1/4 cup steel cut oats (optional)
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • sprinkle of nutmeg and ground cloves (optional)
Mix above ingredients in large mixing bowl.
  • 2 egg whites- well beaten
  • 1 cup canned pumpkin
  • 1 cup high fiber bran cereal
  • 3/4 cup skim milk
  • 1/2 cup karo light or dark corn syrup
Mix ingredients in with dry mixture, blend well.  Spoon into greased muffin cups.  Bake at 400 until firm to the touch, 18-20 minutes.  Cool in pan 5 minutes before removing, cool on rack.
