Cowboy Chicken and Beans
Prep time: 5 minutes
Cook time: 40 minutes
Serves: 6

2 Cups Fully Cooked Shredded Chicken in BBQ Sauce
1 Can (15 oz.) Garbanzo Beans, rinsed and drained
1 Can (15 oz.) Lima Beans, rinsed and drained
1 Can (15 oz.) Kidney Beans, rinsed and drained
1 Cup Shredded Cheddar Cheese

Heat oven to 350ºF.  Grease a 2 qt. casserole dish.  Mix chicken and beans in casserole dish.
Bake uncovered 30-35 minutes or until hot and bubbly.  Sprinkle with cheese.  Bake about 5 minutes longer or until Cheese is melted.

Tips: Put frozen or thawed chicken breasts in the crockpot in the morning on low, cover with BBQ sauce.  When you are ready to make your dish shred the chicken and it’s ready to use. You can add extra sauce before baking.

Chicken Enchiladas

2-3 Chicken Breast Halves

Enchilada Sauce (I prefer homemade)

8-10 tortillas

Shredded Mexican Cheese

Cook chicken (2-3 breast halves) in crockpot with 1/2-1 cup enchilada or tomato sauce until cooked through.  Remove Chicken from crockpot and shred.  Pour Enchilada Sauce over chicken to taste. Fill tortillas with shredded chicken and roll up.  Place in greased 9 x 13 pan.  Cover with enchilada sauce and top with cheese.  Bake at 350 until hot and bubbly.

Chicken Rice Hot Dish 
Prep time: 10 minutes
Cook time: 30  minutes
Serves: 2

¼ Cup Thinly Sliced Celery
3 Tbl Chopped Onion
2 Tbl Butter
1 Cup Broth
1 Medium Carrot, Halved & Thinly Sliced
⅓ Cup Uncooked, Long Grain Rice
¼ tsp Salt
Dash of Pepper
½ Cubed Cooked Chicken
1 Tbl Minced Fresh Parsley

In a small saucepan, saute celery and onion in butter.  Add broth, carrot, rice, salt and pepper.  Bring to a boil.  Reduce heat.  Cover and simmer for 20 minutes.

Stir in Chicken and parsley.  Cover and simmer 5-10 minutes longer or until the rice and vegetables are tender.

Tips: Cut up extra celery and stick in the freezer for another meal.

 

Turkey Egg Rolls 
Total time: 30-40 minutes
Serves: 4

1/2 to 1 pound ground turkey (can substitute other ground meat or omit)
1 pkg fresh broccoli slaw
fresh ground ginger-to taste
Soy Sauce-to taste
1 pkg Egg Roll Wrappers
Cooking Spray

In pan brown meat.  Spray Wok with cooking spray, cook broccoli slaw until vegetables are tender.  Add Ginger and Soy Sauce to Broccoli Slaw, cook for a few minutes then add cooked meat.  Remove from heat.

Follow directions on Egg Roll wrapper package to fill and roll egg rolls with broccoli-meat mixture.  Spray each egg roll with cooking spray.  Bake according to Egg Roll Wrapper package directions.
