Side Dishes

Green Beans with Almonds
Prep time: 5 minutes
Cook time: 10 minutes
Serves: 6

3 Cups Fresh or Frozen Whole Green Beans
1 Cup Water
1 (2oz.) Package Blanched Slivered Almonds
3 Tbl Butter or Margarine
½ tsp Salt
⅛ tsp Pepper
2 Strips Cooked Bacon, Crumbled

Place beans and water in 2-qt. sauce pan.  Bring water to boil.  Reduce heat and cover pan.  Simmer for 7 Minutes or until green beans are tender.  Drain Beans.  (You can steam green beans if you prefer).

While the beans are cooking, melt butter in small skillet.  Add almonds and cook on low heat until golden brown, stirring often.  Place beans in serving bowl; add salt, pepper and bacon and mix well.  Drizzle almond mixture over beans and serve.

Pasta and Feta Salad

1 small container of feta

2-3 tomatoes

cooked, cooled pasta (Rotini works well)


Mix all ingredients until desired consistency.  Refrigerate or serve immediately.


Spinach Casserole

Spinach (Saute)

Cooked Egg Noodles

Grated Swiss Cheese

Chopped Onion

Bread Crumbs

Toss all ingredients and put in casserole dish.  Sprinkle with bread crumbs, bake at 350 until cheese melts.
